Still no clear to me at least. Is the mail being sent to user@broadoak.co.uk then being redirected to Mercury as SMTP mail? If so have you told the router to send all mail for port 25 to the LAN IP address of the system running Mercury/32?
FWIW, the 127.0.0.1 address (local host) only has meaning locally. The router needs to know the local IP address of the system, usually a 192.168.1.x address and you must not be using DHCP to get this address from the router.
