How do I rename a set?

 Set it as the default and rename it.

How do I delete a set?

Just delete the data or the associated inetsig?.* files

I can only edit the text of an existing signature set.

Nothing in Help file about this, or in Knowledge Base or the Forums as far as I can tell...
