Not a whole lot of difference.  The PH server in Mercury uses a addressbook and the PH client gets pretty much the same display as you get with an addressbook.   When you select the address (double click on the entry in PMail) on the PH server though you always get the SMTP email address and not the alias.  Not sure how many mail clients support a PH server nowadays.

If I utilize a directory server and other mail systems can poll this address book doesn't this open me up to spammers sending through email easier?

Yes, no and maybe.  When using a PH server that is accessible from the outside world  then yes the spammers can get your email addresses but no it does not really open you up more to spam since i assume your people are sending to the outside world already.  Your anti-spam system really should not be based on email addresses though, it should be analyzing the source of the mail and the content.
