So I'm one of those poor saps whos smtp has been cut off by comcast lately.  I want to use dyndns's mailhop to get around the problem but I'm unclear where to make the changes in mercury.  What am I missing?

I assume that you are talking about SMTP outbound.  DynDNS should provide you with a SMTP host name and port other than 25 to send mail to their server via MercuryC.   The only changes required should be to convert to from MercuryE to MercuryC and to make the necessary settings in MercuryC.  This will require a re-boot of Mercury.
