I have decided, in the long run, to trust my gmail address fully, so now I would like to make it become my default email address, and use the other one (current default) as second identity.

Is there a way I can do this without having to reset all settings?

There is no way within the UI to do this, no. You should be able to play around with the pmail.ini file (while Pegasus is closed) and rearrange things to be as you wish. However, make a backup first and I can't guarantee what other problems you might experience as a result if, for example, POP3 filters are tied to a particular identity.
