IE render kerning gets funky when I change the preferences (but already default settings aren't much better).
I tweaked the default settings, changing the font to Calibri and zoom factor to 115%.
As
a sample I've included a screengrab of the issue I'm experiencing.
Consider that sometimes this gets quite confusing as the text is not
very readable at first glance.

Sorry to say, but this can only be fixed by Microsoft since it's the IE rendering machine doing this (thus its name), IERenderer can't do anything about the graphical display at all.

Then that's confusing as em Client uses IE as well.

What's confusing about the fact that the renderer is named after the rendering machine it uses (if that's what you meant to say, otherwise please explain)? IMO it's pretty clear ...

Sure, let me explain.
I'm confused because you're saying that the fonts issue is not a Pegasus issue per se, whereas it's due to Microsoft IE render itself.
In my comparison though you can see another email client that uses same render engine, i.e. Microsoft IE and glitches are not there, therefore my confusion.

Well, we need to ensure it doesn't get modified in any way. The easiest way would be a forward as attachment as provided by the forwarding dialog (the third option). This way you can add a meaningful subject and comment without modifying the message itself. Please add a reference to this thread.
