I change the actual credentials in the SMTP Relay Client configuation - the client works - but after restarting mercury, the old configuration is restored. What am I doing wrong?

I tried to repeat the problem but it seems to work as expected here. MercuryC configuration is stored in the mercury.ini file in the main Mercury directory, so it could be that something is preventing access to that file. Make sure that directory is excluded from anti-virus scanning and test if that would help.
