First you need to identify where the autofill (address completion) is coming from: either an addressbook, the recently used list, or both. Check Tools > Options > Outgoing mail > Messages and replies to see what you have enabled.
Once you figure that out you either remove or modify the item so that you get the behavior you want. You can disable either address completion option if you like.
Keep in mind that the address completion may be resolving to an alias of an addressbook entry so changing that alias or perhaps disabling alias resolution may be options. The alias resolution controls are in addressbook properties.
