Is there a way to stop a specific email address auto filling the TO address ?

First you need to identify where the autofill (address completion) is coming from: either an addressbook, the recently used list, or both.  Check Tools > Options > Outgoing mail > Messages and replies to see what you have enabled.

Once you figure that out you either remove or modify the item so that you get the behavior you want.  You can disable either address completion option if you like.

Keep in mind that the address completion may be resolving to an alias of an addressbook entry so changing that alias or perhaps disabling alias resolution may be options.  The alias resolution controls are in addressbook properties.

It uses 'Recently used' only.

As the most recent one now supercedes the older it would
appear to be no longer a problem.

The recently used address list is convenient but can be an annoyance when an invalid address gets stored in it.  That's easy to fix by selecting the entry followed by the Delete key.

You can also access it while in a new message window by clicking on one of the addressbook icons to the right of the To: and CC: fields.
