The problem is that the formatted signature is only used for a formatted message where the "Rich text" box is checked.

After seven years of using Pegasus I need to change a signature, but cannot and cannot find any help.

1. I go to Tools/Options/Signatures/Edit signatures...

2. Signature set : Best wishes/ Variant: Internet address, formatted content 

3. I would expect my existing signature to appear, but all is blank. So I type the new message, click Save and click OK on the screen beneath.

4. Send a message to myself and nothing has changed.

What am I missing?

Make sure you are adding your signature to the appropriate variant.
Pegasus Mail has four variants of each signature:

Local address, plain content
Local address, formatted content
Internet address, plain content
Internet address, formatted content

The variant shown when you enter the signature dialog is "Internet, formatted". To get a normal plain text signature you'll need to change that to "Internet, Plain" and enter your signature.
