These headers are written to the mail by each server along the route according to their settings.

Other way round. The first Date: header (inserted by sending client) is at the bottom, more recent Received: headers (inserted by mail servers on route) get added to the top of the mail.
The Date: header is the "Sent Date" that PegasusMail displays (with the option of converting it to your TZ in the display)
