That you can do by creating multiple identities. For your convenience, you may want to check Add 'Identity' selector in Tools | Options | Messages and replies. Check out this forum for some helpful explanations regarding the concepts of identity and user by Sharkfin and others.
If you're going to use distribution lists, it is very easy to suppress the recipients' email addresses. Just read the instructions given in the Distribution lists section under List addressing settings.
In the case of individual messages, when you open the message editor, you will see a tab called 'Special'. There you can enter Bcc addresses. There has also been an elaborate discussion on this forum about the concept of Bcc. Suffice it to say for now that, for your purposes, I think you may want to activate Suppress Bcc field listings in outgoing mail in to Tools | Options | Outgoing mail.
