options for replies - use custom header

OK, finally found from printed manual that the reply button has options that take you into options dialogs, if you uncheck and recheck custom headers you get into a dialog. Will leave this here to help others.

Probably stupid question - but I am reading about the above in help, but after ages I cannot find where the dialog is to implement these things - cant see anything in "options"?
