We forward all mail that mercury handles to an account called archive. We do this with and Always Triggers mail filtering rule. We also have a copy of Pegasus running on our mail server logged in to the Archive account where we filter messages into a mail out folder, a mail in folder and a spam folder as well as doing some other mail admin tasks with other rules. We detect outgoing mail because out domain is not in the too filed and incoming because it is. Our spam rule is first in the list, to syphon all those off on their own.
For ease of searching etc we make a container folder each year in which we create in, out and spam folders each month.
