new email address with a new identitiy problem

ive added a new identity  , but it hasnt prompted me for the new 'from' email address to go with the new identity.

On testing the new identity , its using the  old from email address.

the  help says 'then go to Tools | Options ' . ive dont that -there is nowehere in the Tools| Options menu to specfiy the new 'from' email address
