When I tried to duplicate your experience, I was able to do so quite easily. I found that if I re-indexed the address book after making the edits to an entry and before closing the address book, I could get the edits to 'stick'.
You will find the 'Reindex addressbook' command after clicking on the "Book" button on the address book's toolbar.
