I'm running Pegasus Mail 4.63.

The options under "Messages and replies" seem to allow both top posting and putting signatures immediately under top posts. I can't make these work. It doesn't matter if I select "place the cursor on an initial blank line" or not, the program always does it. The signature option doesn't do anything. 

I've been running Pegasus for too many years to even think about. Might some option from an earlier version (or one I've made myself) be interfering with this action?

My messages are always sent using plain text but I can't make the method work in formatted replies either.

Look a these settings:

Tools > Options | Outgoing Mail > Messages and replies
[x] For replies, place cursor...
[x] If also inserting a signature...

Tools > Options | Outgoing Mail > Signatures
Default set [Select the signature to use]
[x] Add this variant... upon message creation
Variant: [internet address, plain content]

Have you looked at the available options in the per message dialogue box?

Perform a "Reply with options"; with a message selected press R.
Note: The default behaviour of the message Reply button is controlled by the option selected via the button's option menu (adjacent down arrow).

The recipe is simply "~L-----Original Message Follows-----"

Note: When the option is selected a dialog will display the special codes which may be used.
