I want to document an email by printing its headers and text, but the text is hemongus (nearly an inch high) with the text of the message being 1/8 inch tall. How do I control/change this?

Check the "Use alternate font for printing messages" setting to see if it is enabled and set to an abnormally large font size. It is located in Tools > Options > Incoming mail > Message reader.
