It's pretty easy on Windows 7: Open the Control center page for setting default applications (I'm translating from German so I don't know the exact names). Next select the option for setting a default application (the first one on my system). The list should contain Pegasus Mail, and after selecting it you'll see two options for changing default settings: Please select the one offering to select standards for Pegasus Mail (the second one on my machine). After doing so you'll see a screen like shown below where you may change whatever option you want.

You do not need to do anything with Pegasus Mail regarding MAPI. What you may have to do is set the Default mailer to something else, and that would be done by the other application.   Consult with the other vendor for information on what their needs are.   For your information, Pegasus Mail is not a MAPI client, but intercepts calls to MAPI and transforms these calls to functions that Pegasus Mail understands. The only thing necessary to remove MAPI support from Pegasus Mail is to delete or rename Mapipm.dll in the Pegasus Mail executables directory (c:\pmail or c:\pmail\programs).
