Which version of Pmail are you using? There was formerly a problem of a red background, which was resolved in v4.62.

The color selection for quoted text is located in Tools > Options > Incoming mail > Message reader.  I don't know how you set a background color though.  Perhaps you are replying using a template (although I don't recall there being a way to set a background color in a template either)?
