The easiest solution might be to create a new Copies to self folder.
Steps would be:
1. Rename the existing copies to self folder
2. Create a new Copies to self folder
3. Go to Tools > Options > Outgoing mail > Copies to self ('outbox') and use the "Select folder" button to select the newly created folder as the default Copies to self folder.
4. Test the copy to self function
Once everything is working you can copy the messages from the renamed Copies to self folder to the new Copies to self folder and delete the renamed folder.
